Work Hours/Shift: Full Time/Day
You Will Be Responsible For:
Demonstrates, through behavior, AdventHealth Orlando’s service standards.
Responsible for overseeing menu and recipe development and recipe standardization.
Trains staff on recipes and cooking techniques required for production;
Oversees employee performance and cross-training in the kitchen.
Exhibits and trains staff on preparing food in accordance with all governmental, sanitary, dietitian regulations, inspection and audit criteria.
Teaches standards of cleanliness, sanitation, and safety.
Monitors equipment functionality; ensures supply/ingredient inventory is sufficient for production needs;
Oversees the efficient completion of required operational duties and meets standards;
Monitors employee work status to ensure meeting deadlines.
Finance & Profitability
Manages resources, including increasing revenue and employee engagement while controlling labor use, turnover, inventory, supplies, and equipment;
Utilizes reports/production schedules to monitor and control overtime.
Considers food cost and labor with menu development and pricing.
Consistently monitors for process and performance improvement opportunities in menus, recipes, processes, customer service, and sanitation.
Remains abreast of and implements changes to menus and recipes to reflect current culinary and nutritional trends.
rlandoWhat You Will Need:
Associate degree or Culinary degree, or equivalent years of experience.
Three years of high-volume food service experience.
ServSafe Manager Certification or equivalent.
Ability to cook precisely and efficiently in a high-volume production environment.
Ability to work well in a fast-paced environment and make decisions and multitask under pressure.
Can calculate recipe ingredient amounts for fluctuations in serving size (catering/cafeteria).
Proficient in Windows Office Suite, especially Outlook, Word, Excel, and PowerPoint.
FDA Food Code
Five years’ experience in food service.
High-volume food production experience
The Food Production Center (FPC) Chef, supervises,coordinates,andcontributes to theactivities of cooksand other kitchenpersonnel. Manages and trains the production staff in menu and recipe development and standardization, as well as production services, inventory, and purchasing. Responsibilities include generation of recipes, menu development, food production, and bakery.Collaborates with the leadership team to establish expectations, strategic plans, and priorities. Actively participates in outstanding customer service and accepts responsibility in maintaining relationships that are equally respectful to all.
